I assume that some of you have swapped out your speedometer gauge parts before...
I was thinking about swapping the needle out for something else, is this legal? Is it difficult to do?

Its easy and legal, but one word of the wise:
Use a grease or soft lead pencil to mark the position of your need so you get it on exactly at the position it came off.

Yea, its pretty easy to get into...see here. (http://www.scikotics.com/local/node/31)
You only need to take off the plastic around the gauge though...and then these three screws...

I went through it a bunch of times...I used a normal fork (yes for eating) to take the needles off.
Its important but simple to deal with the needle locations. I took mine off when the car was off...if you do it thise way, the speedo and tach are both exactly on zero so as long as you put them back on zero, you'll be good. The gas needle is mounted right on the crest of the left corner of the "E" (when the car is off)....look at this pic for clarification...its not great but you get the idea.
